Budget Wedding Recipes
Here's some ideas for recipes to help cut the costs for your wedding.
The more you can supply yourself, if you have the time, the better for your budget.
Remember that the way food costs are today, sometimes it's more affordable to have your food prepared, or made by relatives, and brought to the reception.
Mexican Wedding Cookies
1 cup butter/margarine
1/2 cup powdered sugar
1 tsp. vanilla
1/4 tsp. salt
2 cups flour
Cream butter/ margarine, sugar, vanilla, salt and nuts. Stir in flour. Chill 30 minutes.
Shape into balls. Bake 12-15 minutes in a 375F oven. While still warm, roll in powdered sugar.
Wedding PunchRecipe for non alcoholic wedding punch
2 1/2 cups pineapple juice
1 pint lemon or raspberry sherbet
1 pint vanilla ice cream
1 12 oz bottle gingerale or 7 up
Combine pineapple juice, sherbet and 1/2 of the ice cream. Beat until smooth. Add 7 up or ginger ale. Spoon remaining ice cream into punch. Serve immediately. Makes 14 servings Click here for more recipes for your wedding punch and how to make an ice ring.
Secret Champagne Punch
1 can presweetened raspberry Koolaid (that makes 8 quarts)
Half gallon of raspberry Sherbet
2 bottles of generic lemon-lime soda
One bottle of Champagne(optional)
Makes 60 servings (You can also use a lime sherbet with lime koolaid, or an orange sherbet with orange koolaid) Freeze blocks of koolaid in advance in a ringmold or plastic cups. Pour the koolaid into the punch bowl, add the ice ring, add scoops of sherbet, then pour in the gingerale or 7up at the last minute(along with the Champagne if desired)
Breakfast Wedding Cake
This recipe is from a 1950's recipe book I have, and the footnote says that this is the cake they make for the Bridal Breakfast.
1/2 lb. shortening
3/4 lb. brown sugar
1/2 cup molasses
1 cup grape juice
1/2 lb. of flour
1 1/2 Tablespoons cinnamon
1 Tablespoon mace
1/2 Tablespoon ginger
1/2 Tablespoon clove
3 lbs. of raisons
1 lb. of currants
1/2 lb. lemon and orange peel, chopped
1/2 lb. citron, chopped
Cream shortening and sugar together. Add the beaten eggs, molasses, and grape juice and mix well. Mix and sift together the flour, cinnamon, mace, ginger, and clove. Add enough of the sifted flour mixture to the fruit to keep it from sticking together. Add remaining flour and fruit to the first mixture and beat thoroughly. Line the bottom of a large round pan with greased wax paper and grease the sides also. Pour mixture into it and bake in a very slow oven at 225 for 3 to 4 hrs. A small pan of water in the oven helps to keep the cake from burning during the long cooking. Ice and decorate with ornamental frosting. Also see: Make a simple wedding cake
Fruit Kabobs Idea
Take fresh fruit and place on wooden skewers and then stick into a red cabbage that has been flattened on the bottom. This makes a very colorful display on the buffet table
Creamy Fruit Salad
After making your fruit salad, stir in one box of vanilla instant pudding. It with mix with the juice and make a creamy sauce. Serve the fruit salad in fancy small dessert dishes.
Sparkling Fruit Cup
Barely thaw 2 13 oz cans of frozen pineapple chunks, drain reserving the syrup. Pare 5 medium oranges; remove sections by cutting halfway between the membranes.; Reserve juice.
Peel 2 fully ripe bananas, slice into circles (if you score the sides it will make little flowers) and place in orange juice in a large bowl. Add 2 cups of white seedless grapes, the orange sections and the pineapple chunks. Pour the reserve pineapple juice over all. Chill. At serving time, spoon fruit into chilled sherbet glasses. Pour gingerale over each (takes 1-7oz bottle) Trim with cherries and sprigs of mint. Makes 8 to 12 servings.
Simple Orange Juice Punch
Make orange juice out of frozen concentrate. Pour into punch bowl. Float slices of orange and add a little champagne or gingerale for sparkle.
